Lentil Curry Soup

This was sooooo good and EASY!!!

Extra Virgin Olive Oil
5-6 cloves of garlic
small red onion or half of a large one, diced
1 carrot, diced
1 1/2 - 2 Tbsp Curry Powder (I like the gourmet McCormick Hot Madras Curry)
6 cups of chicken broth
2 small potatoes
1 16 oz bag of lentils
Half of a 16 oz bag of yellow split peas
Salt and Pepper


Heat veggies in Olive Oil til tender. Add Curry. Add broth, lentils, peas, and potatoes. Cook til boiling, then simmer, covered for approximately 1 hour. Blend with a hand mixer.
